Rhubarb Grows Well in the Bitterroot Valley

My favorite and a very easy plant to grow in the Bitterroot is Rhubarb! Crimson Red rhubarb is one of the best flavored varieties. Its stalks have a great balance of tartness and sweetness. The plant yields plump stalks that give excellent flavor and color to your pies, cobblers, preserves and other recipes. Rhubarb is a perennial that grows best when planted in full sun to partial shade and in well-drained soil. Stalks should not be harvested the first season after planting.

Rhubarb Dump Cake - My Best Crowd-Pleaser

Layer in 13x9x2" pan in the following order 4 C chopped raw rhubarb 1 C sugar 1 3oz strawberry Jello (sprinkle dry) 1 1/4 C water 1 Box yellow or white cake mix (sprinkle over top) 1 Stick butter sliced over top of cake mix

Bake 1 hour at 350 degrees

Let cool at least 1 hour; cover only with paper towel (to prevent locking in moisture and make soggy). A delicious bonus is to serve with a scoop of vanilla ice cream.
